Braised Red Cabbage

INGREDIENTS

  • 1 1/2 tbsp bacon fat or butter

  • 2 oz onion, medium dice

  • 4 oz granny smith apples, medium dice

  • 2 fl oz stock or water

  • 4 fl oz red wine

  • 4 fl oz red wine vinegar

  • 1/2 oz sugar

  • 1 oz red currant jelly

  • 1 ea cinnamon stick

  • 1 ea clove

  • 1 ea bay leaf

  • 1 ea juniper berry

  • 1 lb red cabbage, chiffonade

  • 1/4 tsp salt

  • as needed ground black pepper

Directions

  1. Heat bacon fat in a large non-reactive pot over medium-low heat.

  2. Add the onions &apples.

  3. Sweat until the onions are translucent & the apples are slightly soft. About 5 minutes.

  4. Add the wine, vinegar, sugar, and jelly. The flavor should be tart and strong.

  5. Make a sachet of cinnamon, clove, bay leaf, and juniper berry. Add the sachet, cabbage, and salt.

  6. Cover tightly and braise in a 350 degree oven until the cabbage is tender, 45 minutes to an hour.

  7. Check regularly to be sure the liquids have not evaporated completely.

  8. Remove the sachet. Taste and adjust with the salt and pepper. Serve.
