French Omelet

INGREDIENTS

  • 18 ea eggs

  • as needed clarified butter

  • 2 ea tomatoes, small diced

  • 6 oz fresh spinach

  • 1 cup cheese, grated

  • 1/2 cup ham, small diced

  • as needed salt

Directions

*Blanch and squeeze the spinach thoroughly. Set aside.

  1. Preheat an oven to 400 degrees. Beat all eggs until well combined.

  2. Heat clarified butter in an omelet pan over high heat. Tilt the pan to coat the entire surface.

  3. Ladle 6oz of egg mixture into the pan and scramble it with a rubber spatula. Season lightly with salt.

  4. Continue to move the pan and spatula at the same time until the egg mixture has cogulated slightly.

  5. Sprinkle garnish of choice and 1.5oz of each cheese over the eggs.

  6. Place pan in oven until cheese is just melted. 1-2 minutes max.

  7. Remove the pan from the oven.

  8. Slide a spatula around the lip of the pan, under the omelet to be sure it is not sticking.

  9. Slide omelet to the front of the pan and use the spatula to fold it inside to the center.

  10. Turn the pan upside down, rolling the omelet onto a heated plate.
