Lemongrass Chicken
INGREDIENTS
1/4 cup lemongrass, pound and cut in 2" slices
1/2 cup sugar
3 tbsp fish sauce
1 1/2 tbsp black pepper
1/2 cup shallots, thinly sliced
1 tbsp garlic, minced
2 tbsp sesame oil
2 tbsp canola oil
2 tbsp sweet soy sauce
4 lbs chicken thighs, bone-in
Directions
Debone chicken thighs, then cut into 1/4 inch thick slices. (8 inches long and 2 inches wide.)
Lightly pound the chicken slices with a mallet.
In a bowl, mix all the marinade ingredients together.
Marinate the chicken with the marinade, for 2 hours in a sealed cryovac bag or best overnight.
Discard excess marinade before grilling.
