Pound Cake

Yields 3 large loaves

INGREDIENTS

  • 470 g butter, 65-70'F

  • 600 g granulated sugar

  • 454 g eggs, 80-90'F

  • 8 g salt

  • 570 g cake flour, sift

  • 4 g baking powder

  • 130 g sour cream

Directions

  1. In a 5 qt mixing bowl, place the butter and sugar.

  2. With a paddle, cream the mixture until properly aerated.

  3. Add the eggs (25% at a time), scrape after each addition.

  4. Sift the dry ingredients together.

  5. Add the dry ingredients all at once.

  6. Mix on low speed until almost combined.

  7. Add the sour cream until just incorporated.

  8. Deposit into prepared pans.

  9. Bake 375 deck, on a sheet pan, approx. 40-50 minutes

  10. CHECK FOR DONENESS: Center is crowned and middle is firm to the touch.
