Family Traditions to Fine Pastries: How Basil Mikulencak Found Their Place at NOCHI
For as long as they can remember, Basil Mikulencak has been captivated by the art of baking.
Growing up in Waco, Texas, baking wasn't just a hobby, it was an obsession. Whether they were watching baking shows, following online tutorials, or playing video games centered around cake decorating and pastry creation, Basil was constantly dreaming about desserts and the techniques behind them. What started as childhood fascination has now become the foundation of a promising career in the culinary arts.
In the Spring of2026, Basil graduated from the New Orleans Culinary & Hospitality Institute's (NOCHI) Baking & Pastry Arts program, taking another step toward their goal of becoming a professional pastry chef. In Fall 2026, they returned to NOCHI to complete the Culinary Arts program, broadening their skills and preparing for an even more dynamic career in the kitchen.
A Passion Built Around Family
Basil's love of baking is deeply connected to family traditions.
Some of their favorite childhood memories include sharing hazelnut coffee and biscotti with their Italian Nonna and making kolache from a treasured family recipe. Their mother also played a major role in inspiring their creativity, making elaborate birthday cakes each year for Basil and their brother. Those experiences showed Basil that food could be both beautiful and deeply meaningful.
As they grew older, turning that lifelong passion into a profession became an easy decision.
Choosing NOCHI for Community and Opportunity
When searching for culinary schools, Basil wanted more than technical instruction.
"I feel like location was a big part of it, but also the program is different than others," they said. "It was more passionate. I liked the community better and the things they stand for."
After relocating to New Orleans in January 2026, Basil quickly discovered that NOCHI delivered on that promise. One of their favorite aspects of the program was the opportunity to create such a wide variety of pastries and desserts while continually expanding their technical abilities.
"Probably getting to make so many different things," they said.
Just as meaningful were the professional opportunities that came with the program.
"I wasn't expecting all the different opportunities you get," Basil shared. "Sometimes schools say they're going to help, and then they don't. Here, people are given a lot of opportunities to branch out in the industry. There are lots of connections with the staff."
Those industry experiences reinforced that NOCHI is committed not only to teaching technical skills but also to helping students build meaningful careers.
Growing Through Every Challenge
Like many aspiring chefs, Basil discovered that culinary school is about more than learning recipes and techniques.
Working in collaborative kitchen environments required patience, communication, and confidence. Those experiences challenged Basil to advocate for themselves while continuing to focus on learning and growth.
Even through those challenges, they remained committed to becoming a stronger chef and taking advantage of every opportunity the program offered.
Returning to NOCHI to Learn Even More
Although baking has always been Basil's first love, their experience during NOCHI's crossover curriculum opened the door to a new passion.
"I like the pace of the kitchen," they said. "Baking has always been more my thing, but cooking with my family has always been a big part of growing up. I had a lot of fun in the crossover."
That experience made the decision to return for the Culinary Arts program an easy one.
By mastering both savory and pastry techniques, Basil hopes to become an even more versatile culinary professional.
Designing a Sweet Future
After completing both programs at NOCHI, Basil hopes to build a career specializing in custom cake design and high-end desserts. They envision contributing to New Orleans' vibrant culinary scene before eventually working in a luxury hotel pastry department, such as the Four Seasons, where they can continue refining their craft.
Long term, they also dream of owning their own custom cake business, combining technical excellence with the creativity that first inspired them as a child.
For Basil, every cake tells a story and thanks to the skills, mentorship, and industry connections they've built at NOCHI, they're just getting started writing their own.
