Trinni Lucas is Turning a Military Career into a Mission to Share Louisiana Cuisine

For Trinni Lucas, food has always been about more than a great meal. It's about preserving culture, creating community, and sharing the flavors of Louisiana wherever life takes him.

A Louisiana native and United States Navy veteran, Trinni has spent years serving others. After his military career, he knew it was time to pursue a second calling, one rooted in his lifelong passion for Louisiana cuisine. That journey led him to the New Orleans Culinary & Hospitality Institute (NOCHI), where he graduated from the Culinary Arts program in Spring 2026.

Before enrolling at NOCHI, Trinni had already taken the first steps toward his dream. While serving in the Naval Reserves, he launched Taste Da Boot, bringing authentic Louisiana food to the Pacific Northwest. What began as a tent at local farmers' markets quickly grew into a thriving business offering catering, meal preparation, and special events. But Trinni knew that passion alone wasn't enough.

"I wanted to learn the fundamentals and techniques," he said. "I was starting my second career after military life, and I wanted the education to match my vision."

At NOCHI, Trinni found exactly what he was looking for. The program strengthened his technical skills while reinforcing the traditions that inspired him to cook in the first place. One of his favorite experiences came during New Orleans Week, when students explored the city's rich culinary heritage through field trips and immersive learning.

"I wanted to compare my own experience with what we were learning in school," he said. "It really connected everything together."

Like every aspiring chef, Trinni faced challenges along the way. Adjusting to the early mornings and the fast pace of the kitchen tested his discipline, especially when balancing tight production timelines.

"Once you get your recipe, getting through the whole process on time can be stressful," he said. "But that's part of learning how to perform in a professional kitchen."

One experience that caught him by surprise was preparing large-scale banquets. Rather than simply learning event setup, students cooked meals for hundreds of classmates and staff members, gaining firsthand experience with the logistics and execution required for high-volume service.

Those experiences have helped prepare Trinni for the next phase of his career, one that extends far beyond a single restaurant.

His entrepreneurial vision continues to grow alongside Taste Da Boot. After graduating, Trinni plans to expand the business with a brick-and-mortar location on Louisiana's Northshore while continuing to build community-focused culinary experiences. His long-term goal is even bigger: creating a culinary institution that combines Louisiana culture, professional training, and educational programming to inspire future generations both in Louisiana and abroad.

That vision received a significant boost when Trinni was selected as the recipient of the Laurence Rua Memorial Scholarship, an honor awarded to an outstanding NOCHI student. The scholarship provides the opportunity to spend a week in Paris, where recipients gain firsthand exposure to one of the world's premier culinary destinations through immersive educational experiences. The opportunity reflects Trinni's dedication, talent, and commitment to continual learning - experiences that will further shape his approach as he works to elevate Louisiana cuisine and expand his entrepreneurial vision.

For Trinni, graduation is not the finish line. It's the foundation.

With the discipline of a veteran, the heart of an entrepreneur, and the technical training gained at NOCHI, he's building a future where Louisiana's culinary traditions continue to reach new audiences, one plate at a time.
