Chocolate Chip Cookies

Makes 2 dozen

INGREDIENTS

  • 15 oz butter, 65-70’ F

  • 10 oz granulated sugar

  • 6.5 oz light brown sugar

  • 11 g salt

  • 8 g vanilla extract

  • 6 oz eggs, 65-70’ F

  • 10 g baking soda

  • 1 lb 5 oz AP flour

  • 1 lb 5 oz chocolate chips, 400 ct

Directions

  1. In a 5 qt mixing bowl, place the butter and sugar.

  2. With a paddle, cream the mixture until properly aerated.

  3. Add the eggs (25% at a time), scrape after each addition.

  4. Sift the dry ingredients together.

  5. Add the dry ingredients all at once.

  6. Mix on low speed until almost combined.

  7. Add the chocolate chips and mix to incorporate

  8. Scoop the cookies and deposit onto parchment lined sheetpans.

  9. Bake until the center is almost done.

Baking

  • 350 degrees for approx 15 minutes, rotate half-way

  • Convection: 325 fans on 2, approx 15 minutes, rotate

  • Check for doneness: edges are firm, center is sof and not completely done.

Variation: Macadamia White Chocolate Chip Cookies

  • Add 1 oz additional butter, 

  • Substitute 1 lb white chocolate chips

  • Add 1 lb lightly toasted/chopped macadamia nuts.
