Mint Ice Cream
INGREDIENTS
2000 g milk
400 g sugar
10 g stabilizer
600 g cream
4 each gelatin sheets
75 g trimoline
200 g mint leaves
Directions
Combine the sugar and the stabilizer, add the milk and cream. Bring to a boil and add the herbs. Infuse for 1 minute.
Pass and blend the herbs with enough liquid to blend. Immediately chill.
Add the gelatin to the remaining base and chill.
When both mixes are cold combine.
