Mint Ice Cream

INGREDIENTS

  • 2000 g milk

  • 400 g sugar

  • 10 g stabilizer

  • 600 g cream

  • 4 each gelatin sheets

  • 75 g trimoline

  • 200 g mint leaves

Directions

  1. Combine the sugar and the stabilizer, add the milk and cream. Bring to a boil and add the herbs. Infuse for 1 minute. 

  2. Pass and blend the herbs with enough liquid to blend.  Immediately chill.

  3. Add the gelatin to the remaining base and chill.

  4. When both mixes are cold combine.
