Muffuletta Olive Salad

INGREDIENTS

  • 3/4 cup green olives, pimento stuffed

  • 1/4 cup kalamata olives, pitted

  • 1/4 cup giardiniera

  • 2 ea pepperoncini

  • 3 ea pickled cocktail onions

  • 2 tbsp capers

  • 1 clove garlic, minced

  • 1 tsp oregano

  • 1/4 tsp black pepper

  • 2 tsp lemon juice

  • 2 tbsp EVOO

Directions

  1. Drain the green olives, kalamata olives, giardiniera, pepperoncini, pickled onions, and capers.

  2. Place in food processor along with the garlic, oregano, pepper, lemon juice, and EVOO.

  3. Pulse until coarsely chopped. Do not completely homogenize!! Should be chunky.
