Negative Chocolate Chip Cookies
INGREDIENTS
1 lb butter, 65-70'F
1 lb granulated sugar
8 oz light brown sugar
8 oz eggs, 65-70'F
11 g salt
8 g vanilla extract
11 g baking soda
7 oz cocoa powder
6 oz bread flour, sift
12 oz cake flour, Sift
2 lb 8 oz white chocolate chips
Directions
In a 12qt mixing bowl, place the butter and sugar.
With a paddle, cream the mixture until properly aerated.
Add the eggs (25% at a time), scrape after each addition.
Sift the dry ingredients together.
Add the dry ingredients all at once.
Mix on low speed until almost combined.
Add the white chips and mix to incorporate
Scoop the cookies and deposit onto parchment lined sheet pans.
Chill the cookies before baking
Bake until the edges are just set. DO NOT OVERBAKE
Baking
350 degrees for approx. 10-12 minutes, rotate half-way
Convection: 325 fans on 2, approx. 12 minutes, rotate
Check for doneness: edges just set, middle very under done
