Following the Dream That Was Always There: Aaron Westbrook's NOCHI Journey
Some dreams arrive early. Others wait patiently until life creates the space to pursue them.
For Aaron Westbrook, that dream was cooking.
Born in Florida and raised in New Orleans, Aaron grew up surrounded by one of the world's greatest food cultures. Inspired by his mother and countless family meals, he developed an appreciation for the way food brings people together. As he got older, that passion only grew, whether he was cooking for friends, teammates, or loved ones. Still, life led him down different paths first.
Aaron proudly served in the military before building a successful career in information technology, eventually working as an IT manager at the Caesars Superdome. It was there that a former NOCHI employee introduced him to the school, planting the seed for what would become his next chapter.
"When I retired in September 2025, I realized I needed a place for my heart to land," Aaron said. "I had let go of my dream of football years ago, but cooking had always been there. It was time to follow my dreams."
He enrolled in NOCHI's Culinary Arts program with one goal in mind: to turn a lifelong passion into a profession.
Throughout the program, Aaron found himself surrounded by instructors who challenged him to think differently about food and helped elevate his skills beyond what he imagined possible.
"My favorite part has been learning from all the brilliant culinary minds here," he said. "Even spending a short time working with Chef Rebecca, I learned things in one week that I hadn't learned throughout the rest of the program. She really understood who we were as students and how to help us grow."
That willingness to learn became one of Aaron's greatest strengths. Coming from military service and the corporate world, culinary school required a different kind of discipline. While the early mornings were an adjustment, Aaron embraced the routine and committed himself to showing up every day.
One surprise, however, wasn't found in the kitchen.
"I wasn't expecting the amount of personalities you interact with every day," he laughed.
Working alongside classmates from different backgrounds became an important part of his experience. The diversity of perspectives, cooking styles, and personalities mirrored the hospitality industry itself, preparing him for the collaborative environments he'll encounter throughout his career.
As a Spring 2026 graduate, Aaron is already looking toward his next goal: launching his own private chef and catering company.
He believes NOCHI has provided far more than technical training. Through chef mentors, classmates, field experiences, and industry connections, he has built a network that will continue supporting him long after graduation.
"With all the connections through NOCHI, it'll definitely help me reach those goals."
Aaron's commitment to excellence was recognized at graduation when he received the Fleur de Wheat Award, an honor presented to the Culinary Arts student who exemplifies craftsmanship, professionalism, and dedication throughout the program. The award reflects the consistency, work ethic, and passion Aaron brought to the kitchen every day—qualities that will continue to serve him as he builds his own private chef and catering business.
Aaron's journey is proof that purpose doesn't always follow a straight path. Sometimes it takes military service, a successful career, and the courage to start over before you discover where you're truly meant to be.
For Aaron, that place is in the kitchen: creating memorable meals, bringing people together, and finally pursuing the dream that was there all along.
