How Jaxon Madoux Built Confidence Through NOCHI's Culinary Arts Program
Jaxon Madoux came to NOCHI with a simple but powerful goal: change the direction of his life. What he found was much more than a new career path. Over the course of a year, completing both the Baking & Pastry Arts program in Fall 2025 and the Culinary Arts program in Spring 2026, Jaxon discovered confidence in himself, a community that challenged and supported him, and opportunities he never imagined when he first walked through NOCHI’s doors.
From the beginning, Jaxon knew he wanted to complete both certificate programs. Rather than choosing between baking and savory, he saw value in mastering both disciplines and building a well-rounded foundation for his future in professional kitchens.
"I wanted to change my life and start heading in the right direction," he says.
That commitment paid off. As he progressed through each program, Jaxon found himself saying yes to new experiences, meeting chefs and classmates who expanded his perspective, and gaining real-world opportunities that reinforced his decision to pursue culinary arts.
"The program opened a lot of doors for me," he says. "Opportunities have come through, and I've gotten to work with a lot of different people."
Those connections became one of the most meaningful parts of his NOCHI experience. Whether collaborating in the kitchen, learning alongside classmates, or building relationships with chef instructors and industry professionals, Jaxon found himself surrounded by people who wanted to see one another succeed. That sense of community helped build something just as important as technical skill: confidence.
Like every culinary student, Jaxon also faced challenges. For him, the biggest hurdle wasn't mastering knife cuts or perfecting sauces. It was simply adjusting to the rhythm of culinary school.
"Waking up every morning that early," he laughs.
There were other surprises, too.
"The amount of dishes we had to do," he says. "I will never be a dishwasher. I will always thank them."
It's a lesson many culinary professionals learn early: every role in the kitchen matters. Developing an appreciation for every member of the team has become part of Jaxon's growth as both a cook and a future colleague.
Now, after earning two NOCHI certificates in consecutive semesters, Jaxon is focused on continuing his momentum. His immediate goal is to work alongside his classmate, Aaron Westbrook, while continuing to grow his experience in professional kitchens.
"I want to continue working in kitchens and keep growing my skills," he says.
Jaxon's story demonstrates that culinary school is about more than learning recipes or mastering techniques. It's about building confidence, discovering community, and creating opportunities for a better future. Looking back, his journey is about much more than earning certificates. It's about choosing a new direction, trusting the process, and finding a community that helped him become more confident with every service, every challenge, and every opportunity.
At NOCHI, Jaxon found more than an education. He found proof that growth happens one day, one teammate, and one kitchen at a time.
